I struggled to make and eat this dinner tonight because I got struck with the stomach flu 🙁 which means I have no appetite so it’s really hard to eat. But that doesn’t go without saying that these tasted amazing! I had to eat them really slowly so they could stay in. Yummy regardless!
1 cup cauliflower rice
3 large chard leaves
1 cup raw shrimp (peeled)
1/4 cup chopped red onion
3 tbsp spicy hummus spread (type in “hummus” in the search bar of the blog and you’ll find the recipe).
A dash of sea salt
A dash of black pepper and seasonings of choice
Purée cauliflower in food processor until rice texture forms and set aside.
Wither chard leaves in a saucepan with a dash of coconut oil over medium heat. Set aside when leaves are set.
Peel and sauté the shrimp with onions and seasonings of choice until ready.
Make wraps and enjoy! You can also add other ingredients to the wrap if you prefer.
