Only 3 days left till christmas! I love the holidays, and all the flavours that come with it (gingerbread, peppermint candy canes, rum? haha!). I decided to incorporate some holiday flavours into my meals but still keeping it 100% clean. Keep yourself on track through the holidays, and let christmas day be your cheat day 😉
3 tbsp almond flour
1/2 tsp coconut flour
1/4 tsp gluten free baking soda
Pinch of sea salt
1/2 tsp cinnamon
A dash of organic nutmeg
1/2 tsp grated ginger (or organic ginger powder)
2 organic cage free eggs
1/4 tsp pure organic vanilla extract
2 tbsp organic canned coconut milk (or light coconut milk)
Combine wet and dry ingredients separately before combining them together in a medium bowl.
Scoop batter into greased heated skillet over medium heat
Serve with fruit and toppings of choice. I topped mine with sliced peaches, kiwi, gogi berries, unsweetened shredded coconut, and a drizzle of cinnamon syrup.
Cinnamon syrup recipe: 2 tbsp raw melted honey and 1/4 tsp ground cinnamon.
