PUMPKIN SPICE GREEK YOGURT PROTEIN PANCAKES WITH HOMEMADE SALTED CARAMEL DRIZZLE

Happy Happy Halloween! I think it’s a normal routine to develop a sweet tooth on halloween, so I made these sweet tooth friendly healthy pancakes for breakfast earlier!

And since I’m too old to go trick ‘a treating, i’ll just get my clean candyish fix at home lol. I didn’t eat the candy corn pumpkin candies because frankly they were to sweet for me, but they work great as a garnish 😉

Recipe: serves 2

1/3 cup almond flour
1 tbsp coconut flour
1/4 cup organic pumpkin purree (from can)
1 organic cage free egg
1 small organic banana
1/4 cup organic non fat plain greek yogurt (use full fat for strict paleo)
1/2 tsp gluten/aluminum free baking powder
A dash of organic pure vanilla extract
A dash of nutmeg
A dash of cloves
A dash of pumpkin spice
*2-4 tbsp salted caramel for topping (type in “caramel” in the search bar to find recipe)

Mix all ingredients in a bowl and fry with coconut oil in a skillet over medium heat. Drizzle with caramel when ready and nom nom nom it down!
