PALEO BAKED TILAPIA AND EGG TOMATO BOWL

Happy Friday guys!!! This yummilicious lunch couldn’t get any better than this 🙂

All I gotta say is yum!

Recipe: serves 1

1 medium ripe organic tomato
1/2 lb organic tilapia fillet
1 organic cage free egg
1/2 tsp organic extra virgin olive oil
1/2 tsp Mrs Dash salt free spice mix
A dash of sea salt and cayenne pepper to taste

Pre-heat oven to 400°F.

Slice the top of the tomato and core the seeds and edges out.

Slice tilapia into tiny cubes and season with all the spices listed above and olive oil.

Place tilapia in the cored tomato bowl. Next, crack the egg right into the middle of the bowl and make sure it’s centred properly, since eggs tend to shift when placed in the oven.

Place the tomato bowl in the oven and bake for 15 minutes.

When ready, sprinkle some cayenne pepper on top of the egg and enjoy!

    I made this today! I think I might have over cooked it because the egg came out a lil too brown, but other than that, it was exquisite! Love all of your posts! You keep are so creative; but yet, you keep dishes simple for me to make. Keep them coming girl! 🙂
