BAKED APPLE CHOCOLATE CHIA PUDDING CUP (AKA SUPERBOWL APPLEBOWL!)

I think the extent of my chocolate obsession is pretty obvious! But as long as it isn’t illegal, i’ll keep blowing up this blog with chocolate recipes until i’m satisfied!
(This pudding makes 3 servings)

Recipe:

1 medium red apple (cored)
1 cup organic unsweetened almond milk
3 tbsp organic chia seeds (I used prana)
2 organic stevia sachets
2 tbsp raw organic cacao powder
Ground cinnamon (to sprinkle on apple)

Preheat oven to 400 degrees F.

Combine almond milk, chia seeds, stevia, and cacao powder in a bowl and stir until well incorporated. Add the cacao powder first before adding the remaining ingredients so the powder doesn’t settle at the top.

Set chia pudding mixture aside and let it sit for 30 minutes, stirring occasionally. The mixture will thicken into a tapioca pudding texture.

When chia pudding is 15 minutes into the setting time, core the middle of the apple and make a shallow hole. Make sure all the seeds are taken out.

Sprinkle cinnamon at the top of the cored apple and place in the pre heated oven. Bake for 10 minutes or until slightly golden brown.

Take out the apple when ready and drizzle the chia pudding into the cored part. This treat is enjoyed best while the apple is still warm so do not let it sit out for too long.

Top with unsweetened coconut shreds and some dark chocolate shavings, or any toppings of choice.
