CUCUMBER AND AVOCADO SOUP

Anything with avocados is right up my alley! I love them because it is the easiest way to get my daily dose of heathy fats for the day, yes I said fats, because good fats are good for you and you shouldn’t be afraid to eat your fats, just in moderation. Most people are stuck with the mythical equation “fats (without categorizing the different kinds of fats)=high cholesterol=obesity and heart disease, but the truth is “refined sugar+simple carbohydrates=high cholesterol, diabetes, heart disease, obesity, and a host of other health problems.” Basically, you need your good fats to assist with your weight loss and fitness goals because consumption of good fats cleanses out the bad fats and bacteria that your body doesn’t need. Avocados are a perfect and healthy fat source because they are loaded with disease fighting antioxidants, contains vitamins B and E (so do cucumbers), and aids in weight loss. The cucumbers help to keep the body hydrated, especially on a warm or even a cold day. If you are a soup lover like me, then this recipe is a must try! It was also my first attempt at making cold soup and it was just as delicious as the traditional warm soup 🙂 credits for this recipe can be found on elanaspantry.com.

Recipe:

1 small avocado
1 medium cucumber (peeled and de-seeded)
1 tbsp minced red onion
1 tbsp organic extra virgin olive oil
1 tbsp lemon juice (squeezed from lemon)
1 tbsp organic raw unfiltered apple cider vinegar (Bragg is a good brand)
1/4 tsp sea salt
1/4 tsp chilli powder
1 cup water
A dash of paprika or cayenne pepper to garnish
Mint leaves (optional)

Place all ingredients (except spices) in a blender and puree until smooth.

Add spices and puree again until well incorporated.

When ready, pour into a soup bowl and garnish with paprika or cayenne pepper. Top with mint leaves and enjoy!
