PALEO POACHED EGG ON AVOCADO VEGGIE HASH

I gotta say my breakfast was banging this morning! It was super easy and yummy. This is definitely a quick and nutritious option if you’re in a hurry or you simply don’t feel like spending that much time in the kitchen (story of my life on wednesdays).

Recipe:

2 organic cage free eggs
Half an organic avocado
2 tbsp diced red onions
1 tbsp diced jalapeño peppers
A handful of veggies of choice
Spices/seasonings of choice

First, dice and sauté your vegetables (with 1 tsp coconut oil) with your spices/seasonings in a skillet over medium heat. Let it simmer for 1 minute and set aside.

Next, it’s time to poach your eggs. Place 1/2 tsp of coconut oil in a skillet over medium heat and crack one egg at a time in the middle, making sure you’re keeping it centred.

Pour 1/4 cup of water around the egg and cover the skillet so that the egg can steam. Remove the egg from the skillet when a white glaze is formed at the top. Repeat the process for the second egg.

Place the egg/s on top of your veggie avocado hash and top with chives and chilli flakes, or toppings of choice.

    1. Thanks hun! Oh trust me girl, it took a few fails before I finally got it right, apparently everyone has a different style of poaching lol 🙂
