EVERYTHING GOOD SWEET POTATO VEGGIE FRITTATA

This recipe only needs one description: BOMB!

Recipe:

Half a medium sweet potato (diced)
5 organic cage free eggs
2 cups spinach
half a medium zucchini
1/3 cup diced baby carrots
1/3 cup diced yellow bell peppers
1/4 cup grape tomatoes
5 asparagus pieces (diced)
A handful of parsley
1/2 cup broccoli
1/2 cup diced celery
A handful of sliced mushrooms
For seasonings I used a pinch of cayenne pepper, sea salt, curry, and oregano.

Wither spinach in saucepan for less than a minute before combing it into remaining ingredients (except eggs). Whisk eggs in a separate bowl with spices before adding it to the remaining ingredients. Pour mixture into greased baking dish and bake at 350 degrees F for 45 mins or until eggs are set. Enjoy with side of choice, or on it own!
