HONEY YOGURT BERRY BRUNCH CAKES


Here are some yummy pancakes for your lovely faces this long weekend.  Seriously, there needs to be s pancake emoji!


These pancakes can be paired with your chocie of bacon or eggs or both! I love pairing sweet entrees with savoury sides because I believe it gives your meal a decent balance of flavour. I actually paired these with lean turkey bacon and they turned out lovely. These pancakes are also gluten free. Brunch on people!

Ingredients: serves 4

2 cups brown rice flour

1 cup unsweetened almond milk

2 free range eggs

1/2 cup plain Greek yogurt

3 tbsp pure honey

Coconut oil for frying

1. Mix all ingredients in a bowl until you get a smooth batter. Place a skillet over medium heat and add coconut oil. Fry both sides until fully cooked.

2. When ready, top with berries or fruit of choice.
