HIGH PROTEIN SWEET POTATO WAFFLES TOPPED WITH ALMOND-HAZELNUT BUTTER, BLUEBERRIES, AND PECANS

If you love sweet potatoes just as much as I do, then you would definitely discover creative ways to enjoy your sweet potato. I recently bought a waffle maker (cuisinart) and it is absolutely amazing! It is also amazing how many delicious recipes you can create with sweet potatoes, and I absolutely lovvveeee it!

Recipe:
1 medium sweet potato (cooked and diced into cubes)
1 cup organic brown rice flour (i used bobs red mill)
1 tbsp organic pure vanilla extract
1/2 tsp baking soda
1/2 a stevia sachet or xylithol
1/4 tsp sea salt
1/2 tsp cinnamon
3 tbsp organic hemp seeds
2 organic cage free eggs
1/4 cup unsweetened almond milk.

Preheat waffle iron and grease with coconut oil. Mash cooked sweet potato in a bowl until buttery consistency forms, then fold in other ingredients until well incorporated. You can also use a food processor to combine ingredients if it’s easier. Pour batter into waffle iron and take out when ready. Top with toppings of choice and enjoy the party in your tummy
