CHOCOLATE CHIP VANILLA BAKED DOUGHNUTS WITH SUGAR FREE POWDERED SUGAR

I’ve been MIA recently and I apologize, summer is a very busy season and i’ve been working on some great opportunities to expand my foodie skills (??) *fingers crossed* but I should be back to posting regularly asap! In the meantime, here’s a healthy cheat treat for those of you who crave doughnuts but still want to stay on track!

These are gluten free, doesn’t contain butter, low in sugar and are sprinkled with my homemade sugar free powdered sugar. I also used dairy free dark chocolate chips! Have a yummy and sexy summer?☀️??

Recipe: yields 6 big doughnuts and 12 baby doughnuts.

Dry Ingredients:

2 cups gluten free oat flour
1 1/2 tsp baking powder
1/4 tsp baking soda
1/4 tsp sea salt

Wet Ingredients:

2 organic cage free eggs
2/3 cup unsweetened coconut milk (from Can)
2 tsp organic pure vanilla extract
1/3 cup organic coconut oil
1/3 cup raw honey (melted)

Add ins:

1 cup semi sweet chocolate chips (Enjoy Life brand)
Powdered sugar (1/2 baking stevia blended with 1/3 cup arrowroot powder or cornstarch).

Preheat oven to 350°F and spray 2 doughnut pans with coconut oil spray.

In two separate bowls, mix wet and dry ingredients separately until well combined, then fold in the dry ingredients into the wet and mix until you get a semi fluffy/mousy batter.

Fold in chocolate chips and gently mix. Scoop batter into a piping bag or a large ziplock bag with the tip cut out, and pipe your batter into the doughnut pan until the edges are filled.

Place the pans in the oven and make for 15-20 minutes. When ready, take the doughnuts out of the oven and let them cool for 10 minutes, or they will fall apart.

Carefully remove doughnuts from the pan and dust with the powdered sugar mixture.

Note: Some people might find the taste of stevia funky, especially when used in baked goods. My palate is used to it so i don’t mind it. However, if you’re not a fan of stevia, you could simply use powdered sugar instead!
