EGGS BENEDICT WITH HOMEMADE LIGHT HOLLANDAISE

Egg drool alert!! Good morning everyone!☀️☀️ I was craving some eggs benny for breakfast so I decided to whip up a healthier version to satisfy my cravings while keeping my tummy happy?

I used half of a sprouted grain bread bun and topped it with spinach, red peppers, onions, avocado slices and a poached egg, drizzled with my yummy hollandaise sauce. The hollandaise sauce is dairy free and only contains 1 tbsp. of butter (the sauce serves 4 people). Have an amazing Sunday!

Recipe for hollandaise:

1 tbsp. grass fed butter (melted)
3/4 cup unsweetened almond milk (mixed with 1 tsp. white vinegar)
1 tbsp. tapioca starch (or cornstarch)
1/2 tsp. sea salt
Pinch of black pepper
1 organic cage free egg, lightly beaten
1 tbsp. lemon juice (squeezed from lemon)

Whisk 1/4 cup milk, tapioca starch, salt and cayenne in a bowl until smooth. Whisk in egg along with the remaining 1/2 cup of milk.

Set the pan over medium-low heat and cook the sauce, whisking constantly, until it comes to a simmer. Cook and continue to whisk until it becomes thick. Remove from heat and whisk in lemon juice and the reserved butter. Serve immediately and enjoy.
