PALEO STRAWBERRY SHORTCAKE WAFFLES

Good morning people! I was craving some good old breakfast comfort food this morning before heading to work, and this definitely satisfied my cravings! The healthy way of course 😉

I wish I could start over and eat this again and again! It was so yummy I had to show you what my first bite looked like!

I know, I’m evil, but this was for me to eat and for you to look at 😉 but if you follow the recipe, you will understand 🙂 Have a great day everyone!

Recipe for waffles (makes 3)

1 1/4 cup almond flour (or 1 cup brown rice flour, or oat flour-not paleo)
2 organic cage free eggs
1/2 cup fresh organic strawberries (diced)
1/2 tsp gluten/aluminum free baking soda
2-3 tbsp unsweetened almond milk
1 tsp organic coconut palm sugar
1/4 tsp organic pure vanilla extract
1/4 tsp cinnamon
A dash of nutmeg
A dash of sea salt

Glaze:

1/3 cup organic unsweetened coconut milk
1 organic sweet leaf stevia sachet
A dash of cinnamon
A dash of organic pure vanilla extract

Pre-heat waffle maker.

Combine waffle ingredients in a bowl and mix until a smooth batter forms.

Pour batter into the waffle iron and let it cook until ready.

Take out waffles and set aside. To make glaze, mix all glaze ingredients together and warm it up in the microwave for 30 seconds.

Pour warm glaze over waffles and top with more diced strawberries. If you want a real treat, you can also add a light drizzle of organic pure maple syrup 🙂
