TUNA AVOCADO DIP WITH SWEET POTATO KRUGAR CLAWS

Recipe: serves 2

1 medium sweet potato
1 tsp organic extra virgin olive oil (for potatoes)
1 can organic sodium free tuna
1 ripe avocado
A handful of diced red onions, tomatoes, and red peppers
Black pepper and a pinch of sea salt to taste

First, you have to make your krugar claws. Preheat your oven to 400 degrees F and slice your potato into medium sized wedges. Toss your wedges in olive oil and spices of choice and place on a baking sheet lined with parchment paper.

Bake wedges for 25 minutes, tossing both sides so they don’t burn. Set aside when ready.

Make your dip by mashing your tuna and mixing it with the rest of the ingredients.
