GARBANZO BEAN BURGERS WITH PICO DE GALO SALAD

A super great vegan alternative to meat burgers. This recipe is packed with tons of flavour and nutrition, and is also quite easy to make.

Recipe:

1 can organic garbanzo beans (drained)
1/2 a small red bell pepper
1/4 cup chopped baby carrots
Half a small garlic clove
A handful of chopped fresh cilantro leaves
1/4 tsp cumin
1 tsp organic tahini paste
A dash of sea salt and black pepper
1 tsp organic extra virgin olive oil

Preheat oven to 350 degrees.
Combine all ingredients in a food processor and pulse until well ground.
Place mixture in a bowl and refrigerate for 30 minutes.
When ready, shape mixture into burger patties and placed on a baking dish lined with parchment paper.
Bake patties for 20 minutes (10 minutes on each side).
Serve with organic mustard and salad of choice (I had mine with pico de gallo salad).
