PALEO “OREO” PROTEIN PANCAKES

Yipee! My first Oreo inspired pancakes! Definitely a great breakfast to start my week off right. I found a vegan version of the recipe on Pinterest and I decided to modify the ingredients and make a paleo version 🙂

Of course my version doesn’t do the original version any justice, but I tried. All that matters is how yummy it was, and trust me, it totally was!

You could add Oreos to your pancakes if you want, however it wouldn’t be healthy, so save it for a cheat day.

Recipe: makes 4

Pancakes:

1/4 cup almond flour
1 tbsp coconut flour
2 organic cage free eggs
1/2 scoop sun warrior blend raw protein powder (or 3 tbsp organic hemp seeds)
1/4 cup organic raw cacao powder
2 tbsp organic coconut palm sugar
1/2 cup unsweetened coconut milk
1 organic banana
Coconut oil (for frying)

Filling:

1/3 cup organic unsweetened coconut flakes
1/4 tsp organic pure vanilla extract
1/2 tsp organic baking stevia
2 tbsp unsweetened coconut milk

Purée pancake ingredients in a food processor until smooth. The cacao powder might make the batter a little thick, so you can add more milk to loosen it up if that is the case. Make sure you also taste your batter, and if you don’t find it sweet enough, add more sugar until you get a desired flavour.

Fry pancakes with 1 tsp coconut oil in a skillet over medium heat. You should get 4 pancakes. Set aside when ready.

Next, prepare your filling. Blend all filling ingredients in a food processor until a thick coconut butter consistency forms. This process may take up to 5 minutes.

Layer pancakes with filling to create a high layer of Oreos, and enjoy!
