CHERRY MANGO VANILLA ICE CREAM CUPS (DAIRY FREE)

Yes! Another day, another amazing treat to beat the scorching heat! I crave ice cream almost every day in the summer, but if I have a magnum bar everyday, my tastebuds would love me but my waistline would never forgive me 😉 so I figured hey! Stay active, and enjoy these guilt free treats not everyday, but as an occasional indulgence. Trust me, the feeling of being able to treat your body without the guilt is the best feeling in the world! You can eat ice cream and still look sexy! 😉

Recipe: makes 10 cups

1 large mango
1 cup cherries (pitted)
1 cup unsweetened almond milk
1 1/2 scoops sun warrior vanilla protein powder (gives it an ice cream texture)
1/8 tsp organic pure vanilla extract

Place mango, 1/2 a cup almond milk, and 1 scoop of protein powder in a blender and blend until smooth.

Fill a silicone muffin tray with the mango mixture until it is half way full.

Place in the freezer for 1 hour.

Next, place pitted cherries, 1/2 a cup almond milk, 1/2 scoop of protein powder, and 1/8 tsp vanilla extract in a blender and blend until smooth.

Top the frozen mango mixture with the cherry mixture and freeze for another hour.

Let it thaw for 5 minutes before consuming.

*Store these in an air tight container. They keep for about a week.

    Do you have to use a silicon muffin tin?

    1. I find it easier to use a silicone muffin pan because they pop out easily. I’ve never used a regular muffin tin but i’m guessing they might work! Just run a toothpick around the edges so that they come out 🙂

        1. Anytime! I keep my dairy to a minimum to avoid occasional bloating, and I eliminate it temporarily when i’m pmsing lol. Let me know how you find them!

          2. Feel free to also use coconut milk from the can. Unsweetened full fat or lite works 🙂
