DARK CHOCOLATE BANANA BREAD

And the obsession for dark chocolate continues………..

Recipe:

1 cup whole walnuts
1 cup whole pecans
2 tbsp extra virgin olive oil
1/2 cup almond flour/meal
1/2 cup brown rice flour
2 medium organic bananas
2 organic cage free eggs
1 tbsp organic pure maple syrup
1 tsp gluten/aluminum free baking soda
1 tsp gluten/aluminum free baking powder
1 tsp organic pure vanilla extract
1 tsp cinnamon
1/4 tsp sea salt
1/4 cup semi sweet dark chocolate chips (i used enjoy life’s)
Coconut oil for greasing

Combine dry ingredients (almond/rice flour, baking powder/soda, cinnamon, and salt) in a bowl and set aside, then place nuts (pecans and walnuts) in a food processor or blender and pulse until you get a meal texture.

Add olive oil and banana and pulse again until moist, then add wet ingredients (eggs, vanilla extract, and maple syrup) to nut mixture.

Combine dry and wet ingredients together until well incorporated and gently mix in chocolate chips. Do not over mix because it will become too moist. Pour into a greased bread baking pan. Bake at 350 degrees F for 30 minutes or until it passes the toothpick test. Serve and enjoy! Yum!
