HOMEMADE PESTO

There are so many different kinds of pesto, and each kind comes with a unique twist which gives it a unique flavour. Pesto is a great substitute for tomato based/pasta sauces, and can also be used on pastas, quinoa, salads, and many more. Plus, it also contains far less/no sodium compared to the traditional canned tomatoes you find at the store. I thought i’d share my own favourite pesto recipe, but feel free to get creative 🙂

Recipe:

1 cup organic fresh basil leaves
1/3 cup raw walnuts
1/4 cup organic light feta cheese
3 tbsp extra virgin olive oil (or more depending on how smooth you want it)
2 tbsp raw pepitas (pumpkin seeds)
1 tsp organic chia seeds
A dash of sea salt and paprika to taste

Place all ingredients in a food processor and puree until smooth.

This preserves for about a week.
