CAULIFLOWER CARIBBEAN SHRIMP AND MISCELLANEOUS VEGGIE PIZZA….OH MY

Pizza used to be one of my favourite junk foods, and after switching to a healthier lifestyle, I had a hard time letting go of pizza, but I believed I had to do so to stay on track. After many attempts of searching for pizza recipes, my good friend @dieffs came up with the perfect crust recipe using cauliflower! Cauliflower is very nutritious and very multifunctional. It is a great source of fibre, manganese, vitamin C and K, antioxidants, and many more! The benefits are endless. If you’re not already on the cauliflower bandwagon, then I suggest you jump on it ASAP 🙂

Recipe for crust:

1 small cauliflower head
1/4 cup almond flour
1 tbsp flaxseed meal
1 organic cage free egg
1/2 tsp oregano
1/4 tsp curry
1/4 tsp thyme
1/4 tsp ground black pepper
Pinch of sea salt

Topping:

3/4 cup raw caribbean shrimp (peeled)
Diced orange peppers
Sliced mushrooms
Broccoli
Jalapeños
Red onions
Eggplant
Grape tomatoes
Green olives
Organic vegan rice cheese

Preheat oven to 350 degrees.
Slice cauliflower florets into small pieces and place in food processor or blender until rice texture forms, then place rice blend in the microwave for 5 minutes.
Mix other ingredients together and add to cauliflower when ready.
Place cauliflower batter mixture on a non stick pizza pan and spread out to make crust.
Top with toppings of choice and place in the oven for 35-40 mins (mine took 35 mins).
Enjoy when ready!
